Ingredients

  • Eggplant - 300 grams
  • Garlic - 2 cloves, minced

  • Soy sauce - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the eggplant and cut it into thin slices, about 1 cm thick.
  2. Sprinkle salt over the eggplant slices and let them sit for 10 minutes to draw out excess moisture.
  3. Rinse the salted eggplant slices under cold water and pat them dry with a paper towel.
  4. In a skillet, heat the sesame oil over medium heat and add the minced garlic. Sauté for about 30 seconds until fragrant.
  5. Add the eggplant slices to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and lightly browned.
  6. Stir in the soy sauce, chopped green onions, and black pepper. Cook for an additional 2 minutes.
  7. Remove from heat and sprinkle sesame seeds on top before serving.
