Steps
- Wash the Japanese eggplants and cut them into 1-inch thick slices.
- Heat the olive oil in a non-stick skillet over medium heat.

- Place the eggplant slices in the skillet and cook for 5-7 minutes, turning occasionally, until they start to soften.

- Cover the skillet and reduce the heat to low, allowing the eggplant to braise for an additional 10-15 minutes until tender.
