Ingredients

  • Eggplant - 1 medium
  • Soy sauce - 2 tablespoons
  • Sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Gochujang - 1 tablespoon
  • Mayonnaise - 2 tablespoons
  • Vegetable oil - for grilling

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture, then rinse and pat dry.
  2. In a bowl, mix together soy sauce, sugar, minced garlic, sesame oil, and black pepper to create a marinade.
  3. Marinate the eggplant slices in the mixture for 10 minutes, ensuring they are well coated.
  4. Heat a grill pan or skillet over medium heat and add a little vegetable oil.
  5. Grill the marinated eggplant slices for about 4-5 minutes on each side, or until they are tender and have grill marks.
  6. While the eggplant is grilling, mix gochujang with mayonnaise in a small bowl to create a spicy sauce.
  7. To assemble the burgers, place a grilled eggplant slice on the bottom half of each burger bun, top with lettuce, tomato, cucumber, and a dollop of the spicy sauce. Cover with the top half of the bun.
