  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced

Steps

  1. In a pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  2. Add the sliced pork belly to the pot and cook until browned on all sides.
  3. Pour in the water and bring to a gentle boil. Skim off any foam that appears on the surface.
  4. Stir in the chopped kimchi, soy sauce, and gochugaru, allowing the mixture to simmer for 10 minutes.
  5. Add the sliced mushrooms, carrot, and zucchini to the pot, cooking for an additional 10 minutes until the vegetables are tender.
  6. Gently add the cubed tofu and chopped green onions, simmering for another 5 minutes.
  7. Taste and adjust the seasoning if necessary, then serve hot.
