- Pork belly - 300 grams, diced
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Onion - 1 medium, chopped
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Bone broth - 1 liter
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat. Add the diced pork belly and cook until browned, about 5-7 minutes.
- Add the minced garlic, grated ginger, and chopped onion to the pot. Sauté for another 3-4 minutes until the onion becomes translucent.
- Stir in the sliced carrot, zucchini, and mushrooms, cooking for an additional 3-5 minutes until slightly softened.
- Pour in the bone broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for 20 minutes.
- Stir in the coconut aminos, and season with salt and black pepper to taste.
- Serve hot, garnished with chopped green onions.
