Ingredients

  • Pork belly - 300 grams, diced
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Bone broth - 1 liter
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the diced pork belly and cook until browned, about 5-7 minutes.
  2. Add the minced garlic, grated ginger, and chopped onion to the pot. Sauté for another 3-4 minutes until the onion becomes translucent.
  3. Stir in the sliced carrot, zucchini, and mushrooms, cooking for an additional 3-5 minutes until slightly softened.
  4. Pour in the bone broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for 20 minutes.
  5. Stir in the coconut aminos, and season with salt and black pepper to taste.
  6. Serve hot, garnished with chopped green onions.
