Ingredients

  • Acorn starch - 100 grams
  • Water - 400 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Green onion - 1, finely chopped
  • Carrot - 1/2, julienned
  • Cucumber - 1/2, julienned
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste

Steps

  1. In a medium saucepan, mix the acorn starch with 400 ml of water until fully dissolved.
  2. Heat the mixture over medium heat, stirring continuously until it thickens and becomes translucent, about 10-15 minutes.
  3. Once thickened, pour the mixture into a flat dish and let it cool completely at room temperature for about 10 minutes.
  4. Once cooled, refrigerate for at least 10 more minutes to firm up further.
  5. In a small bowl, combine soy sauce, sesame oil, minced garlic, and a pinch of salt to create the dressing.
  6. Cut the cooled dotorimuk into bite-sized cubes and place them in a serving bowl.
  7. Top with julienned carrot and cucumber, and drizzle the dressing over the top.
  8. Garnish with chopped green onion and toasted sesame seeds before serving.
