- Acorn starch - 100 grams
- Water - 400 ml
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 1 clove, minced
- Green onion - 1, finely chopped
- Carrot - 1/2, julienned
- Cucumber - 1/2, julienned
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
Steps
- In a medium saucepan, mix the acorn starch with 400 ml of water until fully dissolved.
- Heat the mixture over medium heat, stirring continuously until it thickens and becomes translucent, about 10-15 minutes.
- Once thickened, pour the mixture into a flat dish and let it cool completely at room temperature for about 10 minutes.
- Once cooled, refrigerate for at least 10 more minutes to firm up further.
- In a small bowl, combine soy sauce, sesame oil, minced garlic, and a pinch of salt to create the dressing.
- Cut the cooled dotorimuk into bite-sized cubes and place them in a serving bowl.
- Top with julienned carrot and cucumber, and drizzle the dressing over the top.
- Garnish with chopped green onion and toasted sesame seeds before serving.
