Ingredients

  • Cooked short-grain rice - 2 cups
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Spinach - 100 grams, blanched
  • Shiitake mushrooms - 100 grams, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Eggs - 2, fried
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2, chopped

Steps

  1. In a small pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the sliced shiitake mushrooms to the pan and cook until tender, about 5 minutes. Season with 1 tablespoon of soy sauce and set aside.
  3. In the same pan, add another tablespoon of vegetable oil. Sauté the julienned carrots and zucchini separately until they are just tender, about 3-4 minutes each. Season with a pinch of salt and set aside.
  4. In a large bowl, combine the blanched spinach with 1 teaspoon of sesame oil and a pinch of salt. Set aside.
  5. To assemble, heat two dolsot (stone pots) or non-stick pans over medium heat and lightly oil the bottom with vegetable oil.
  6. Divide the cooked rice evenly between the two pots, pressing it down slightly to create a base.
  7. Layer the sautéed mushrooms, carrots, zucchini, and spinach over the rice in an artistic arrangement.
  8. In a separate pan, fry the eggs sunny-side up or to your preference.
  9. Top each dolsot bibimbap with a fried egg, a drizzle of the remaining sesame oil, and a generous dollop of gochujang.
  10. Sprinkle with toasted sesame seeds and chopped green onions before serving. Allow the rice to crisp for a few minutes on the bottom before digging in.
