Ingredients
- Cooked short-grain rice - 2 cups
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Spinach - 100 grams, blanched
- Shiitake mushrooms - 100 grams, sliced
- Soy sauce - 2 tablespoons
- Sesame oil - 2 tablespoons
- Gochujang (Korean chili paste) - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Eggs - 2, fried
- Sesame seeds - 1 tablespoon, toasted
- Green onions - 2, chopped
Steps
- In a small pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the sliced shiitake mushrooms to the pan and cook until tender, about 5 minutes. Season with 1 tablespoon of soy sauce and set aside.
- In the same pan, add another tablespoon of vegetable oil. Sauté the julienned carrots and zucchini separately until they are just tender, about 3-4 minutes each. Season with a pinch of salt and set aside.
- In a large bowl, combine the blanched spinach with 1 teaspoon of sesame oil and a pinch of salt. Set aside.
- To assemble, heat two dolsot (stone pots) or non-stick pans over medium heat and lightly oil the bottom with vegetable oil.
- Divide the cooked rice evenly between the two pots, pressing it down slightly to create a base.
- Layer the sautéed mushrooms, carrots, zucchini, and spinach over the rice in an artistic arrangement.
- In a separate pan, fry the eggs sunny-side up or to your preference.
- Top each dolsot bibimbap with a fried egg, a drizzle of the remaining sesame oil, and a generous dollop of gochujang.
- Sprinkle with toasted sesame seeds and chopped green onions before serving. Allow the rice to crisp for a few minutes on the bottom before digging in.
