Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 50 grams, blanched
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean red pepper paste) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onion - 1 stalk, chopped
  • Sesame seeds - 1 tablespoon, for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and combine the rice with 300 ml of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until cooked. Remove from heat and let it sit covered for another 10 minutes.
  2. While the rice is cooking, heat 1 tablespoon of sesame oil in a non-stick skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced mushrooms and cook for 3-4 minutes until softened. Then, add the julienned carrot and zucchini, and stir-fry for another 3-4 minutes until the vegetables are tender. Season with salt and pepper to taste.
  4. In a small bowl, mix the soy sauce and gochujang until well combined. Set aside.
  5. In a serving stone bowl or a regular bowl, layer the cooked rice at the bottom. Arrange the sautéed vegetables on top of the rice, followed by the blanched spinach.
  6. Drizzle the gochujang-soy sauce mixture over the top, then sprinkle with chopped green onion and sesame seeds.
  7. Drizzle the remaining tablespoon of sesame oil on top for extra flavor. Serve immediately and enjoy your Dolsot Bap hot!
