Dolsot Bap

Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Mushrooms (shiitake or button) - 100 grams, sliced
- Spinach - 50 grams, blanched
- Sesame oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Gochujang (Korean red pepper paste) - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onion - 1 stalk, chopped
- Sesame seeds - 1 tablespoon, for garnish
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain and combine the rice with 300 ml of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until cooked. Remove from heat and let it sit covered for another 10 minutes.
- While the rice is cooking, heat 1 tablespoon of sesame oil in a non-stick skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook for 3-4 minutes until softened. Then, add the julienned carrot and zucchini, and stir-fry for another 3-4 minutes until the vegetables are tender. Season with salt and pepper to taste.
- In a small bowl, mix the soy sauce and gochujang until well combined. Set aside.
- In a serving stone bowl or a regular bowl, layer the cooked rice at the bottom. Arrange the sautéed vegetables on top of the rice, followed by the blanched spinach.
- Drizzle the gochujang-soy sauce mixture over the top, then sprinkle with chopped green onion and sesame seeds.
- Drizzle the remaining tablespoon of sesame oil on top for extra flavor. Serve immediately and enjoy your Dolsot Bap hot!
