Ingredients

  • Cooked short-grain rice - 1 cup
  • Firm tofu - 200 grams, cubed
  • Spinach - 100 grams
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Bean sprouts - 100 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Sesame seeds - 1 tablespoon
  • Green onion - 1, chopped
  • Salt - to taste
  • Pepper - to taste
  • Vegetable oil - for frying

Steps

  1. In a bowl, marinate the cubed tofu with 1 tablespoon of soy sauce and 1 tablespoon of sesame oil for 15 minutes.
  2. Heat a pan over medium heat and add vegetable oil. Once hot, add the tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same pan, add a bit more oil if needed and sauté the garlic until fragrant. Add the shiitake mushrooms and cook for about 3 minutes until soft.
  4. Next, add the julienned carrot and zucchini, and continue to sauté for another 3-4 minutes until tender. Add the spinach and bean sprouts, cooking for an additional 2 minutes. Season with salt and pepper to taste.
  5. In a small bowl, mix gochujang with 1 tablespoon of water to make a sauce.
  6. To serve, divide the cooked rice into two hot stone bowls (or regular bowls if unavailable). Top with the sautéed vegetables and tofu, arranging them nicely.
  7. Drizzle sesame oil over the top, sprinkle with sesame seeds and chopped green onion, and add the gochujang sauce. Serve immediately, mixing everything together before eating.
