Ingredients

  • Ddeok (Korean rice cakes) - 200 grams
  • Spaghetti or linguine - 160 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Shallots (sliced) - 1 medium
  • Carrot (julienned) - 1 small
  • Spinach - 100 grams
  • Green onion (chopped) - 2 stalks
  • Red chili pepper (sliced) - 1 (optional)
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a large pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the minced garlic and sliced shallots to the pot and sauté for 2-3 minutes until fragrant.
  3. Stir in the julienned carrot and cook for another 3-5 minutes until slightly tender.
  4. Add the ddeok (rice cakes) to the pot and cook for about 5 minutes until they soften.
  5. Meanwhile, cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  6. Once the ddeok is soft, add the spinach and soy sauce, stirring until the spinach wilts.
  7. Incorporate the cooked pasta into the pot and drizzle with sesame oil, mixing well to combine.
  8. Season with salt and pepper to taste. If desired, add sliced red chili pepper for some heat.
  9. Serve the dish hot, garnished with chopped green onion and a sprinkle of sesame seeds.
