  • Korean rice cakes (tteok) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a pot, bring the vegetable broth to a boil over medium heat.
  2. Add the sliced Korean rice cakes and cook for about 5 minutes until they soften.
  3. Stir in the rice noodles and cook for an additional 3-4 minutes until the noodles are tender.
  4. Add the minced garlic, julienned carrot, and zucchini to the pot, cooking for another 5 minutes until the vegetables are tender.
  5. Stir in the fresh spinach, soy sauce, sesame oil, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
  6. Remove from heat and serve hot, garnished with chopped green onions and sesame seeds.
