Ingredients

  • Ddeok (Korean rice cake) - 200 grams
  • Korean wheat noodles (guksu) - 100 grams
  • Vegetable broth - 750 ml
  • Garlic ( minced) - 2 cloves
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onion (chopped) - 2 stalks
  • Carrot (julienned) - 50 grams
  • Spinach - 50 grams
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the minced garlic and soy sauce to the broth, stirring well.
  3. Once the broth is simmering, add the ddeok (rice cakes) and cook for about 10 minutes until they become soft.
  4. In a separate pot, bring water to a boil and cook the wheat noodles according to package instructions, usually around 5-7 minutes, and then drain.
  5. After the rice cakes have softened, add the julienned carrots and spinach to the broth, cooking for an additional 5 minutes.
  6. In a bowl, place a portion of the cooked noodles and ladle the hot broth with rice cakes and vegetables over the top.
  7. Drizzle sesame oil and sprinkle chopped green onions, salt, and pepper to taste before serving.
