- Korean wheat noodles (guksu) - 100 grams
- Vegetable broth - 750 ml
- Garlic ( minced) - 2 cloves
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onion (chopped) - 2 stalks
- Carrot (julienned) - 50 grams
- Spinach - 50 grams
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, bring the vegetable broth to a simmer over medium heat.
- Add the minced garlic and soy sauce to the broth, stirring well.
- Once the broth is simmering, add the ddeok (rice cakes) and cook for about 10 minutes until they become soft.
- In a separate pot, bring water to a boil and cook the wheat noodles according to package instructions, usually around 5-7 minutes, and then drain.
- After the rice cakes have softened, add the julienned carrots and spinach to the broth, cooking for an additional 5 minutes.
- In a bowl, place a portion of the cooked noodles and ladle the hot broth with rice cakes and vegetables over the top.
- Drizzle sesame oil and sprinkle chopped green onions, salt, and pepper to taste before serving.
