Ingredients
- Rice cakes - 200 grams
- Brown rice - 150 grams
- Water - 500 ml
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Korean gochujang (red chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Maple syrup - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Sesame seeds - 1 tablespoon
- Spinach - 100 grams, blanched
Steps
- Rinse the brown rice under cold water and soak it in water for 30 minutes. Drain and set aside.
- In a pot, combine the soaked brown rice and 500 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, prepare the sauce by mixing gochujang, soy sauce, maple syrup, sesame oil, and minced garlic in a bowl until well combined.
- In a large skillet or pan, add the rice cakes, julienned carrot, and zucchini. Pour the sauce over the vegetables and rice cakes, then stir to coat everything evenly.
- Cook on medium heat for about 5-7 minutes, stirring occasionally, until the rice cakes are heated through and the vegetables are slightly tender.
- Add the blanched spinach and chopped green onions to the pan, stirring until everything is well mixed and heated through, about 2 more minutes.
- Serve hot, garnished with sesame seeds on top.
