Ingredients

  • Rice cakes - 200 grams
  • Brown rice - 150 grams
  • Water - 500 ml
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Korean gochujang (red chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Sesame seeds - 1 tablespoon
  • Spinach - 100 grams, blanched

Steps

  1. Rinse the brown rice under cold water and soak it in water for 30 minutes. Drain and set aside.
  2. In a pot, combine the soaked brown rice and 500 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked. Remove from heat and let it sit covered for 5 minutes.
  3. While the rice is cooking, prepare the sauce by mixing gochujang, soy sauce, maple syrup, sesame oil, and minced garlic in a bowl until well combined.
  4. In a large skillet or pan, add the rice cakes, julienned carrot, and zucchini. Pour the sauce over the vegetables and rice cakes, then stir to coat everything evenly.
  5. Cook on medium heat for about 5-7 minutes, stirring occasionally, until the rice cakes are heated through and the vegetables are slightly tender.
  6. Add the blanched spinach and chopped green onions to the pan, stirring until everything is well mixed and heated through, about 2 more minutes.
  7. Serve hot, garnished with sesame seeds on top.
