Ingredients

  • Rice cakes - 200 grams
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Green onion - 2 stalks, chopped
  • Spinach - 100 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Water - 500 milliliters
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a medium pot, bring 500 milliliters of water to a boil and add the rice cakes. Cook for about 5-7 minutes until they become soft and chewy. Drain and set aside.
  2. In the same pot, add a splash of sesame oil and sauté the minced garlic until fragrant.
  3. Add the julienned carrot and zucchini to the pot and stir-fry for about 3-4 minutes until slightly softened.
  4. Stir in the gochujang, soy sauce, and honey, mixing well to combine with the vegetables.
  5. Return the cooked rice cakes to the pot and add the spinach. Stir everything together and cook for another 5 minutes until the spinach wilts and everything is heated through.
  6. Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
