- Rice cakes - 200 grams
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Green onion - 2 stalks, chopped
- Spinach - 100 grams
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Honey - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Water - 500 milliliters
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a medium pot, bring 500 milliliters of water to a boil and add the rice cakes. Cook for about 5-7 minutes until they become soft and chewy. Drain and set aside.
- In the same pot, add a splash of sesame oil and sauté the minced garlic until fragrant.
- Add the julienned carrot and zucchini to the pot and stir-fry for about 3-4 minutes until slightly softened.
- Stir in the gochujang, soy sauce, and honey, mixing well to combine with the vegetables.
- Return the cooked rice cakes to the pot and add the spinach. Stir everything together and cook for another 5 minutes until the spinach wilts and everything is heated through.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
