Ddeok Juk

Ddeok Juk is a comforting Korean rice cake porridge, perfect for a nourishing snack. This Paleo version uses wholesome ingredients to create a warm, satisfying dish that is both gluten-free and dairy-free.

Ingredients

  • Sweet rice flour (glutinous rice flour) - 100g
  • Water - 400ml
  • Coconut sugar - 2 tbsp
  • Sea salt - 1/4 tsp
  • Coconut milk - 100ml
  • Sesame seeds (toasted) - 1 tbsp
  • Chopped green onions (for garnish) - 1 tbsp

Steps

  1. In a medium saucepan, combine sweet rice flour and water. Stir until the mixture is smooth and free of lumps.
  2. Place the saucepan over medium heat and continuously stir the mixture to prevent it from sticking to the bottom.
  3. After about 5 minutes, the mixture will start to thicken. Continue to stir for another 5-7 minutes until it reaches a porridge-like consistency.
  4. Add the coconut sugar and sea salt to the mixture, stirring until fully dissolved.
  5. Pour in the coconut milk and stir well. Allow it to cook for an additional 2-3 minutes until everything is heated through.
  6. Remove from heat and let it cool slightly before serving.
  7. Serve warm, garnished with toasted sesame seeds and chopped green onions.
