Ddeok Juk
Ddeok Juk is a comforting Korean rice cake porridge, perfect for a nourishing snack. This Paleo version uses wholesome ingredients to create a warm, satisfying dish that is both gluten-free and dairy-free.

Ingredients
- Sweet rice flour (glutinous rice flour) - 100g
- Water - 400ml
- Coconut sugar - 2 tbsp
- Sea salt - 1/4 tsp
- Coconut milk - 100ml
- Sesame seeds (toasted) - 1 tbsp
- Chopped green onions (for garnish) - 1 tbsp
Steps
- In a medium saucepan, combine sweet rice flour and water. Stir until the mixture is smooth and free of lumps.
- Place the saucepan over medium heat and continuously stir the mixture to prevent it from sticking to the bottom.
- After about 5 minutes, the mixture will start to thicken. Continue to stir for another 5-7 minutes until it reaches a porridge-like consistency.
- Add the coconut sugar and sea salt to the mixture, stirring until fully dissolved.
- Pour in the coconut milk and stir well. Allow it to cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and let it cool slightly before serving.
- Serve warm, garnished with toasted sesame seeds and chopped green onions.
