Ingredients

  • Chicken breast - 300 grams, diced
  • Sweet potato - 150 grams, peeled and cut into thin strips
  • Zucchini - 100 grams, sliced
  • Cabbage - 100 grams, chopped
  • Carrot - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon

Steps

  1. In a bowl, mix the diced chicken with gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and black pepper. Let it marinate for at least 15 minutes.
  2. While the chicken is marinating, prepare the vegetables: sweet potato, zucchini, cabbage, carrot, and green onion.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated chicken to the skillet and cook for about 5-7 minutes until the chicken is browned and cooked through.
  5. Add the sweet potato strips to the skillet and stir-fry for another 5 minutes, until they start to soften.
  6. Add the zucchini, cabbage, and carrot to the skillet and stir-fry everything together for another 5-7 minutes until all the vegetables are tender.
  7. Finally, stir in the chopped green onion and cook for an additional 1-2 minutes.
  8. Serve hot, making sure to mix everything well before serving.
