- Chicken breast - 300 grams, diced
- Sweet potato - 150 grams, peeled and cut into thin strips
- Zucchini - 100 grams, sliced
- Cabbage - 100 grams, chopped
- Carrot - 50 grams, julienned
- Green onion - 2 stalks, chopped
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Black pepper - to taste
- Vegetable oil - 1 tablespoon
Steps
- In a bowl, mix the diced chicken with gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and black pepper. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables: sweet potato, zucchini, cabbage, carrot, and green onion.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken to the skillet and cook for about 5-7 minutes until the chicken is browned and cooked through.
- Add the sweet potato strips to the skillet and stir-fry for another 5 minutes, until they start to soften.
- Add the zucchini, cabbage, and carrot to the skillet and stir-fry everything together for another 5-7 minutes until all the vegetables are tender.
- Finally, stir in the chopped green onion and cook for an additional 1-2 minutes.
- Serve hot, making sure to mix everything well before serving.
