Ingredients

  • Chicken thighs, boneless - 300 grams
  • Zucchini - 1 medium, sliced
  • Cabbage, green - 100 grams, chopped
  • Green onions - 2 stalks, chopped
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. 1. Start by cutting the chicken thighs into bite-sized pieces and marinating them in a mixture of gochujang, soy sauce, minced garlic, minced ginger, and black pepper for about 15 minutes.
  2. 2. While the chicken is marinating, prepare the vegetables by slicing the zucchini and chopping the cabbage and green onions.
  3. 3. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
  4. 4. Once the chicken is cooked, add the zucchini and cabbage to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender.
  5. 5. Drizzle sesame oil over the stir-fry and toss to combine. Adjust seasoning if needed.
  6. 6. Serve the stir-fry in bowls, garnished with chopped green onions and sesame seeds.
