Ingredients
- Chicken thighs, boneless - 300 grams
- Zucchini - 1 medium, sliced
- Cabbage, green - 100 grams, chopped
- Green onions - 2 stalks, chopped
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, for garnish
Steps
- 1. Start by cutting the chicken thighs into bite-sized pieces and marinating them in a mixture of gochujang, soy sauce, minced garlic, minced ginger, and black pepper for about 15 minutes.
- 2. While the chicken is marinating, prepare the vegetables by slicing the zucchini and chopping the cabbage and green onions.
- 3. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 7-10 minutes.
- 4. Once the chicken is cooked, add the zucchini and cabbage to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender.
- 5. Drizzle sesame oil over the stir-fry and toss to combine. Adjust seasoning if needed.
- 6. Serve the stir-fry in bowls, garnished with chopped green onions and sesame seeds.
