Ingredients

  • Chicken thighs, boneless - 300 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Rice cakes (tteok) - 150 grams
  • Cabbage, chopped - 100 grams
  • Carrot, julienned - 50 grams
  • Green onion, chopped - 2 stalks
  • Mozzarella cheese, shredded - 100 grams
  • Water - 200 milliliters
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, and grated ginger to make the marinade.
  3. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
  4. While the chicken is marinating, soak the rice cakes in warm water for about 10 minutes to soften them.
  5. In a baking dish, combine the marinated chicken, soaked rice cakes, chopped cabbage, julienned carrot, and chopped green onion.
  6. Add 200 milliliters of water to the mixture and stir well to combine all ingredients.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. After 25 minutes, remove the foil, sprinkle shredded mozzarella cheese on top, and return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, let it cool for a few minutes, and serve warm.
