- Chicken thighs, boneless - 300 grams
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Rice cakes (tteok) - 150 grams
- Cabbage, chopped - 100 grams
- Carrot, julienned - 50 grams
- Green onion, chopped - 2 stalks
- Mozzarella cheese, shredded - 100 grams
- Water - 200 milliliters
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, and grated ginger to make the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well and let it marinate for at least 15 minutes.
- While the chicken is marinating, soak the rice cakes in warm water for about 10 minutes to soften them.
- In a baking dish, combine the marinated chicken, soaked rice cakes, chopped cabbage, julienned carrot, and chopped green onion.
- Add 200 milliliters of water to the mixture and stir well to combine all ingredients.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil, sprinkle shredded mozzarella cheese on top, and return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
- Remove from the oven, let it cool for a few minutes, and serve warm.
