Ingredients

  • Daikon radish - 300 grams, grated
  • Carrot - 50 grams, grated
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 pieces (dairy-free)
  • Cucumber - 50 grams, thinly sliced
  • Lettuce leaves - 2 pieces
  • Kimchi - 100 grams, chopped

Steps

  1. In a large bowl, combine the grated daikon radish, grated carrot, chopped green onion, minced garlic, and grated ginger.
  2. Add cornstarch, soy sauce, sesame oil, salt, and black pepper to the bowl and mix until well combined.
  3. Shape the mixture into two patties, pressing firmly to hold them together.
  4. Heat a non-stick skillet over medium heat and lightly grease it with a little sesame oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  6. While the patties are cooking, prepare the kimchi slaw by mixing chopped kimchi with sliced cucumber in a small bowl.
  7. Toast the burger buns lightly if desired.
  8. To assemble, place a lettuce leaf on each bun, top with a daikon patty, and add a generous spoonful of the kimchi slaw.
  9. Top with the other half of the bun and serve immediately.
