  • Ginger - 1 inch, minced
  • Green onions - 2, chopped
  • Paleo-friendly kimchi - 100 grams
  • Coconut aminos - 2 tablespoons
  • Bone broth (or water) - 400 ml
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 tablespoon

Steps

  1. Heat sesame oil in a medium pot over medium heat.
  2. Add diced pork belly and cook until browned, about 5-7 minutes.
  3. Stir in minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
  4. Add zucchini and mushrooms, cooking for 3-4 minutes until they begin to soften.
  5. Pour in the bone broth and bring to a simmer.
  6. Add the paleo-friendly kimchi and coconut aminos, stirring well.
  7. Season with black pepper and let simmer for 15 minutes, allowing flavors to meld.
  8. Serve hot, garnished with chopped green onions.
