Ingredients

  • Pork belly - 200 grams, sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Zucchini - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bone broth - 500 ml
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a pot, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  2. Add the sliced pork belly to the pot and cook until browned on all sides.
  3. Pour in the bone broth and bring to a simmer.
  4. Stir in coconut aminos, red pepper flakes, salt, and black pepper.
  5. Add the shiitake mushrooms, zucchini, and carrot to the pot and let simmer for about 10 minutes until the vegetables are tender.
