Ingredients
- Pork belly - 300 grams, diced
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, sliced
- Green onions - 2 stalks, chopped (plus extra for garnish)
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Cauliflower rice - 200 grams
- Bone broth (chicken or beef) - 500 ml
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chili flakes - 1 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat, then add the diced pork belly and sauté until browned, about 5-7 minutes.
- Add the minced garlic, sliced ginger, and chopped green onions to the pot, cooking for another 2-3 minutes until fragrant.
- Pour in the bone broth and bring the mixture to a boil. Reduce heat to low and simmer for 20 minutes.
- Stir in the sliced mushrooms and coconut aminos, continue to simmer for another 10 minutes. Season with salt, black pepper, and chili flakes if using.
- Meanwhile, in a separate pot, steam the cauliflower rice for about 5-7 minutes until tender.
- To serve, divide the steamed cauliflower rice between two bowls, ladle the soup over the rice, and garnish with additional green onions.
