Ingredients

  • Pork belly - 300 grams, diced
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, sliced
  • Green onions - 2 stalks, chopped (plus extra for garnish)
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Cauliflower rice - 200 grams
  • Bone broth (chicken or beef) - 500 ml
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Chili flakes - 1 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat, then add the diced pork belly and sauté until browned, about 5-7 minutes.
  2. Add the minced garlic, sliced ginger, and chopped green onions to the pot, cooking for another 2-3 minutes until fragrant.
  3. Pour in the bone broth and bring the mixture to a boil. Reduce heat to low and simmer for 20 minutes.
  4. Stir in the sliced mushrooms and coconut aminos, continue to simmer for another 10 minutes. Season with salt, black pepper, and chili flakes if using.
  5. Meanwhile, in a separate pot, steam the cauliflower rice for about 5-7 minutes until tender.
  6. To serve, divide the steamed cauliflower rice between two bowls, ladle the soup over the rice, and garnish with additional green onions.
