Ingredients

  • Pork belly - 200 grams, diced
  • Water - 4 cups (1 liter)
  • Soy sauce - 2 tablespoons
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Scallions - 2, chopped (separate white and green parts)
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Carrot - 1 small, sliced
  • Zucchini - 1 small, sliced
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat. Add the diced pork belly and cook until browned, about 5 minutes.
  2. Add the minced garlic, ginger, and the white parts of the scallions to the pot. Sauté for another 2 minutes until fragrant.
  3. Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer.
  4. Stir in the soy sauce, gochugaru, sliced mushrooms, carrot, and zucchini. Simmer for 15 minutes, or until the vegetables are tender.
  5. Season with salt and black pepper to taste. Serve hot, garnished with the green parts of the scallions.
