Ingredients
- Pork belly - 200 grams, diced
- Water - 4 cups (1 liter)
- Soy sauce - 2 tablespoons
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Garlic - 4 cloves, minced
- Ginger - 1 teaspoon, minced
- Scallions - 2, chopped (separate white and green parts)
- Mushrooms (shiitake or button) - 100 grams, sliced
- Carrot - 1 small, sliced
- Zucchini - 1 small, sliced
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the sesame oil over medium heat. Add the diced pork belly and cook until browned, about 5 minutes.
- Add the minced garlic, ginger, and the white parts of the scallions to the pot. Sauté for another 2 minutes until fragrant.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer.
- Stir in the soy sauce, gochugaru, sliced mushrooms, carrot, and zucchini. Simmer for 15 minutes, or until the vegetables are tender.
- Season with salt and black pepper to taste. Serve hot, garnished with the green parts of the scallions.
