Ingredients

  • Pork shoulder - 300 grams
  • Soy sauce (or coconut aminos for Paleo) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey (or a sugar substitute) - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Green onion, chopped - 2 tablespoons
  • Lettuce leaves (butter or romaine) - 4 large leaves
  • Carrot, julienned - 1 medium
  • Cucumber, thinly sliced - 1 medium
  • Sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. 1. In a mixing bowl, combine soy sauce, sesame oil, honey, minced garlic, minced ginger, gochujang, and chopped green onion to make the marinade.
  2. 2. Cut the pork shoulder into thin strips and add them to the marinade, ensuring they're well coated. Allow to marinate for at least 15 minutes.
  3. 3. Heat a grill or skillet over medium-high heat. Once hot, add the marinated pork strips and cook for about 5-7 minutes, stirring occasionally until cooked through and slightly caramelized.
  4. 4. While the pork is cooking, prepare the vegetable toppings by julienning the carrot and slicing the cucumber.
  5. 5. Once the pork is cooked, season with salt and black pepper to taste, and remove from heat.
  6. 6. To assemble the burgers, take a lettuce leaf, add a generous portion of the cooked pork, and top with julienned carrots, cucumber slices, and a sprinkle of sesame seeds.
  7. 7. Serve immediately and enjoy your Daeji Bulgogi Burger!
