Ingredients
- Shrimp (peeled and deveined) - 200 grams
- Cauliflower rice - 200 grams
- Chicken or seafood broth - 500 ml
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Green onion (chopped) - 2 stalks
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a medium pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the shrimp to the pot and cook until they turn pink, about 3-4 minutes. Remove the shrimp and set aside.
- In the same pot, add the cauliflower rice and broth. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes, stirring occasionally until the cauliflower is tender.
- Once the cauliflower is cooked, use an immersion blender to blend the mixture until smooth (optional for a creamy texture).
- Return the cooked shrimp to the pot and stir in the soy sauce, salt, and black pepper. Simmer for another 2-3 minutes to heat through.
- Serve hot, garnished with chopped green onions and sesame seeds.
