- Cornstarch - 25 grams
- Water - 100 ml
- Egg - 1 large
- Green onions - 2 stalks, chopped
- Carrot - 50 grams, julienned
- Zucchini - 50 grams, julienned
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons for frying
Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, and water to create a smooth batter.
- Add the egg, salt, and black pepper to the batter and mix well.
- Fold in the sweet shrimp, chopped green onions, julienned carrot, and zucchini into the batter until evenly combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour half of the batter into the skillet, spreading it evenly to form a pancake.
- Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes on the other side.
- Repeat the process with the remaining batter, adding more oil if necessary.
- Serve hot, optionally with a dipping sauce made of soy sauce and vinegar.
