Ingredients

  • Sweet shrimp (peeled) - 200 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 25 grams
  • Water - 100 ml
  • Egg - 1 large
  • Green onions - 2 stalks, chopped
  • Carrot - 50 grams, julienned
  • Zucchini - 50 grams, julienned
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons for frying

Steps

  1. In a mixing bowl, combine the all-purpose flour, cornstarch, and water to create a smooth batter.
  2. Add the egg, salt, and black pepper to the batter and mix well.
  3. Fold in the sweet shrimp, chopped green onions, julienned carrot, and zucchini into the batter until evenly combined.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  5. Pour half of the batter into the skillet, spreading it evenly to form a pancake.
  6. Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes on the other side.
  7. Repeat the process with the remaining batter, adding more oil if necessary.
  8. Serve hot, optionally with a dipping sauce made of soy sauce and vinegar.
