  • Ginger (minced) - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Green onions (chopped) - 2 stalks
  • Sesame seeds - 1 teaspoon

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  4. Toss in the julienned carrot, sliced bell pepper, and zucchini; stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix the soy sauce and gochujang together, then pour this sauce over the shrimp and vegetables.
  6. Drizzle sesame oil over the mixture, stirring to coat everything evenly and cook for an additional 1-2 minutes.
  7. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
