- Ginger - 1 teaspoon, grated
- Curry powder - 2 tablespoons
- Soy sauce - 1 tablespoon
- Coconut milk - 200 ml
- Vegetable broth - 300 ml
- Spring onions - 2, chopped

Steps
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent.
- Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.
- Stir in the sliced chicken breast and cook until no longer pink.
- Add the julienned carrot and zucchini to the pot and sauté for another 3-4 minutes.
- Sprinkle the curry powder over the chicken and vegetables, stirring well to coat evenly.
- Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle simmer. Let it cook for about 10 minutes.
- Add the cooked udon noodles to the pot, stirring to combine everything well. Season with soy sauce, salt, and pepper to taste.
- Serve hot, garnished with chopped spring onions.
