Ingredients
- Firm tofu - 300 grams
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Garlic powder - 1 teaspoon
- Cornstarch - 3 tablespoons
- Vegetable oil - for frying
- Burger buns - 2
- Cucumber - 1 small, thinly sliced
- Carrot - 1 small, julienned
- Red cabbage - 100 grams, shredded
- Vegan mayonnaise - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Kimchi - 100 grams, for topping
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into two equal patties.
- In a bowl, mix soy sauce, gochujang, and garlic powder. Marinate the tofu patties in this mixture for at least 10 minutes.
- In another bowl, combine shredded red cabbage, julienned carrot, and sliced cucumber. In a small bowl, mix vegan mayonnaise, rice vinegar, sesame oil, salt, and pepper, then pour over the vegetables and toss to coat.
- Coat each marinated tofu patty with cornstarch on both sides.
- In a skillet, heat vegetable oil over medium heat. Fry the tofu patties for 4-5 minutes on each side or until golden brown and crispy.
- Toast the burger buns lightly in the skillet for 1-2 minutes.
- Assemble the burgers by placing a crispy tofu patty on the bottom half of each bun, topping it with the kimchi slaw, and placing the top half of the bun over it.
