  • Ginger powder - 1 teaspoon
  • Panko breadcrumbs - 1/2 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - 1/2 cup
  • Sriracha mayonnaise (dairy-free) - 2 tablespoons

Steps

  1. Press the firm tofu to remove excess water for 15 minutes, then crumble it into a bowl.
  2. Add the chopped kimchi, cornstarch, soy sauce, sesame oil, garlic powder, ginger powder, salt, and black pepper to the crumbled tofu, mixing well until combined.
  3. Shape the mixture into two patties and coat each patty with panko breadcrumbs, pressing gently to adhere.
