Ingredients

  • Nori sheets - 2
  • Shredded unsweetened coconut - 100 grams
  • Cream cheese - 100 grams, softened
  • Erythritol or preferred sweetener - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Chopped almonds - 30 grams
  • Coconut oil - 1 tablespoon

Steps

  1. In a mixing bowl, combine the softened cream cheese, shredded coconut, erythritol, and vanilla extract until well blended.
  2. Lay a nori sheet on a bamboo sushi mat or a clean surface, shiny side down.
  3. Spread half of the coconut mixture evenly over the nori, leaving a 2 cm border at the top.
  4. Sprinkle half of the chopped almonds over the coconut mixture.
  5. Using the mat, carefully roll the nori away from you, pressing gently but firmly to create a tight roll.
  6. Moisten the top edge of the nori with a little water to seal the roll.
  7. Repeat the process with the second nori sheet and remaining filling.
  8. Using a sharp knife, slice each roll into bite-sized pieces.
  9. Brush the slices lightly with melted coconut oil for added flavor and shine before serving.
