- Nori sheets - 2

- Chopped almonds - 30 grams
- Coconut oil - 1 tablespoon
Steps
- In a mixing bowl, combine the softened cream cheese, shredded coconut, erythritol, and vanilla extract until well blended.
- Lay a nori sheet on a bamboo sushi mat or a clean surface, shiny side down.
- Spread half of the coconut mixture evenly over the nori, leaving a 2 cm border at the top.
- Sprinkle half of the chopped almonds over the coconut mixture.
- Using the mat, carefully roll the nori away from you, pressing gently but firmly to create a tight roll.
- Moisten the top edge of the nori with a little water to seal the roll.
- Repeat the process with the second nori sheet and remaining filling.
- Using a sharp knife, slice each roll into bite-sized pieces.
- Brush the slices lightly with melted coconut oil for added flavor and shine before serving.
