Ingredients

  • Chwinamul (edible greens) - 100 grams
  • Firm tofu - 150 grams
  • Canned chickpeas - 100 grams, drained and rinsed
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, sliced
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by pressing the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 10 minutes.
  2. While the tofu is being pressed, prepare the chwinamul by rinsing it thoroughly under cold water. Drain and set aside.
  3. In a large bowl, combine the chickpeas, julienned carrot, and sliced cucumber.
  4. Once the tofu is pressed, cut it into small cubes and add it to the bowl with chickpeas and vegetables.
  5. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, minced garlic, salt, and black pepper to create the dressing.
  6. Pour the dressing over the salad mixture and toss gently to combine all the ingredients.
  7. Add the chwinamul to the salad and toss lightly to incorporate.
  8. Sprinkle sesame seeds on top before serving.
