- Chwinamul (edible greens) - 100 grams
- Firm tofu - 150 grams
- Canned chickpeas - 100 grams, drained and rinsed
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, sliced
- Sesame oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by pressing the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 10 minutes.
- While the tofu is being pressed, prepare the chwinamul by rinsing it thoroughly under cold water. Drain and set aside.
- In a large bowl, combine the chickpeas, julienned carrot, and sliced cucumber.
- Once the tofu is pressed, cut it into small cubes and add it to the bowl with chickpeas and vegetables.
- In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, minced garlic, salt, and black pepper to create the dressing.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients.
- Add the chwinamul to the salad and toss lightly to incorporate.
- Sprinkle sesame seeds on top before serving.
