Ingredients

  • Dandelion greens - 100 grams
  • Perilla leaves - 50 grams
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Fish sauce (or coconut aminos for strict Paleo) - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste

Steps

  1. Thoroughly wash the dandelion greens and perilla leaves under cold water to remove any dirt and impurities.
  2. In a pot, bring water to a boil and blanch the dandelion greens for 1-2 minutes until tender but still vibrant green.
  3. Remove the greens and immediately transfer them to a bowl of ice water to stop the cooking process. Drain well and squeeze out excess water.
  4. In a mixing bowl, combine the blanched dandelion greens and perilla leaves.
  5. Add the minced garlic, sesame oil, fish sauce (or coconut aminos), red pepper flakes, and salt to the greens. Toss gently until all ingredients are well combined.
  6. Sprinkle sesame seeds over the top and give it one final gentle toss.
  7. Serve immediately or let it sit for about 10 minutes for the flavors to meld before serving.
