Ingredients
- Short-grain rice - 1 cup (200g)
- Water - 1.5 cups (360ml)
- Grilled eel (chueo) - 150g, deboned and sliced
- Spinach - 1 cup (30g), blanched and chopped
- Carrot - 1 medium (60g), julienned
- Zucchini - 1 small (100g), julienned
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon (10g), toasted
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear. Drain and soak the rice in water for 30 minutes, then drain again.
- In a medium pot, combine the soaked rice and 1.5 cups of water. Bring to a boil over medium heat, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the vegetables. In a pan, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the julienned carrot and zucchini to the pan, and stir-fry for about 3-4 minutes until they are tender but still crisp. Add the blanched spinach and cook for an additional minute. Season with salt and black pepper to taste.
- Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables, grilled eel slices, soy sauce, and chopped green onions. Stir gently to combine all ingredients.
- Serve the Chueotang Bap warm, garnished with toasted sesame seeds.
