Ingredients

  • Chonggak radishes - 300 grams
  • Sea salt - 1 tablespoon
  • Water - 250 milliliters
  • Rice vinegar - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red pepper flakes - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped

Steps

  1. Rinse the chonggak radishes under cold water and trim off the tops and roots.
  2. Cut the radishes into thin rounds, about 0.5 cm thick, and place them in a mixing bowl.
  3. Sprinkle sea salt over the radish slices and toss to coat. Let them sit for about 10 minutes to draw out excess moisture.
  4. In a separate bowl, combine water, rice vinegar, minced garlic, grated ginger, red pepper flakes, and sesame oil. Mix well to create the pickling liquid.
  5. After 10 minutes, rinse the radishes under cold water to remove excess salt, then drain thoroughly.
  6. Place the radish slices in a clean jar or container and pour the pickling liquid over them, ensuring they are fully submerged.
  7. Add chopped green onions to the jar and seal it tightly.
  8. Refrigerate for at least 20 minutes to allow the flavors to meld before serving.
