- Chonggak radishes - 300 grams

- Water - 250 milliliters
- Rice vinegar - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Red pepper flakes - 1 teaspoon
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
Steps
- Rinse the chonggak radishes under cold water and trim off the tops and roots.
- Cut the radishes into thin rounds, about 0.5 cm thick, and place them in a mixing bowl.
- Sprinkle sea salt over the radish slices and toss to coat. Let them sit for about 10 minutes to draw out excess moisture.
- In a separate bowl, combine water, rice vinegar, minced garlic, grated ginger, red pepper flakes, and sesame oil. Mix well to create the pickling liquid.
- After 10 minutes, rinse the radishes under cold water to remove excess salt, then drain thoroughly.
- Place the radish slices in a clean jar or container and pour the pickling liquid over them, ensuring they are fully submerged.
- Add chopped green onions to the jar and seal it tightly.
- Refrigerate for at least 20 minutes to allow the flavors to meld before serving.
