Steps
- Wash the chonggak radishes thoroughly to remove any dirt, and then cut off the tops and roots.
- Slice the radishes into thin rounds or quarters and place them in a mixing bowl.
- Sprinkle the salt over the radishes and toss well, letting them sit for about 10 minutes to draw out moisture.
- In a separate bowl, combine the minced garlic, minced ginger, Korean red pepper flakes, fish sauce, and sugar to create the kimchi paste.
- Add the kimchi paste to the radishes and mix well, ensuring all pieces are coated evenly.
- Fold in the chopped green onions and mix again.
- Transfer the mixture to a clean glass jar, pressing it down to eliminate air pockets, and leave it at room temperature for about 2 hours to ferment slightly.
- After fermentation, sprinkle sesame seeds on top before serving.
