  • Korean red pepper flakes (gochugaru) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Wash the chonggak radishes thoroughly to remove any dirt, and then cut off the tops and roots.
  2. Slice the radishes into thin rounds or quarters and place them in a mixing bowl.
  3. Sprinkle the salt over the radishes and toss well, letting them sit for about 10 minutes to draw out moisture.
  4. In a separate bowl, combine the minced garlic, minced ginger, Korean red pepper flakes, fish sauce, and sugar to create the kimchi paste.
  5. Add the kimchi paste to the radishes and mix well, ensuring all pieces are coated evenly.
  6. Fold in the chopped green onions and mix again.
  7. Transfer the mixture to a clean glass jar, pressing it down to eliminate air pockets, and leave it at room temperature for about 2 hours to ferment slightly.
  8. After fermentation, sprinkle sesame seeds on top before serving.
