Ingredients
- Cooked chicken breast - 150 grams, shredded
- Cucumber - 1 medium, julienned
- Garlic - 1 clove, minced
- Sesame oil - 1 tablespoon
- Chicken broth - 500 ml, low sodium
- Vinegar (preferably rice vinegar) - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2 stalks, chopped
Steps
- In a pot, combine the chicken broth, minced garlic, sesame oil, and vinegar. Heat on medium until warm.
- Once the broth is warm, add the shredded chicken and cook for an additional 5 minutes.
- Season the soup with salt and black pepper to taste.
- Remove from heat and let it cool to room temperature.
- Once cooled, serve the soup in bowls, topped with julienned cucumber and chopped spring onions.
