Ingredients

  • Cooked chicken breast - 150 grams, shredded
  • Cucumber - 1 medium, julienned
  • Garlic - 1 clove, minced
  • Sesame oil - 1 tablespoon
  • Chicken broth - 500 ml, low sodium
  • Vinegar (preferably rice vinegar) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2 stalks, chopped

Steps

  1. In a pot, combine the chicken broth, minced garlic, sesame oil, and vinegar. Heat on medium until warm.
  2. Once the broth is warm, add the shredded chicken and cook for an additional 5 minutes.
  3. Season the soup with salt and black pepper to taste.
  4. Remove from heat and let it cool to room temperature.
  5. Once cooled, serve the soup in bowls, topped with julienned cucumber and chopped spring onions.
