- Gluten-free flour - 100 grams
- Cocoa powder - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Sugar - 50 grams
- Egg - 1 large
- Milk - 50 ml
- Vegetable oil - 30 ml
- Vanilla extract - 1 teaspoon
- Marshmallow fluff - 70 grams
- Dark chocolate (for coating) - 100 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the gluten-free flour, cocoa powder, baking powder, salt, and sugar.
- In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
- Spoon the batter onto the prepared baking sheet, making small circles (about 5 cm in diameter) and flattening them slightly.
- Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
- Once cooled, spread a generous dollop of marshmallow fluff on the flat side of half of the cakes.
- Top with the remaining cakes, pressing gently to create sandwiches.
- Melt the dark chocolate in a microwave or double boiler until smooth.
- Dip each sandwich into the melted chocolate, ensuring it's fully coated, and place back on the parchment paper.
- Chill in the refrigerator for about 15 minutes to set the chocolate before serving.
