Ingredients

  • Gluten-free flour - 100 grams
  • Cocoa powder - 30 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Sugar - 50 grams
  • Egg - 1 large
  • Milk - 50 ml
  • Vegetable oil - 30 ml
  • Vanilla extract - 1 teaspoon
  • Marshmallow fluff - 70 grams
  • Dark chocolate (for coating) - 100 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the gluten-free flour, cocoa powder, baking powder, salt, and sugar.
  3. In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
  5. Spoon the batter onto the prepared baking sheet, making small circles (about 5 cm in diameter) and flattening them slightly.
  6. Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  7. Once cooled, spread a generous dollop of marshmallow fluff on the flat side of half of the cakes.
  8. Top with the remaining cakes, pressing gently to create sandwiches.
  9. Melt the dark chocolate in a microwave or double boiler until smooth.
  10. Dip each sandwich into the melted chocolate, ensuring it's fully coated, and place back on the parchment paper.
  11. Chill in the refrigerator for about 15 minutes to set the chocolate before serving.
