Steps
- Rinse the fresh chives under cold water and chop them into 2-3 cm pieces.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- Gradually add water to the dry ingredients, stirring until you achieve a smooth batter.
- Fold the chopped chives into the batter until evenly distributed.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it out evenly to form a pancake.
- Cook for about 3-4 minutes or until golden brown on the bottom, then flip and cook for another 3-4 minutes on the other side.
- Repeat the process with the remaining batter, adding more oil as needed.
- Once cooked, remove the pancakes from the skillet and let them cool slightly before cutting into wedges.
- Serve warm with soy sauce for dipping.
