Ingredients

  • Cooked short-grain rice - 1 cup
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Carrot - 1 small, julienned
  • Cucumber - 1 small, julienned
  • Radish (daikon) - 50 grams, julienned
  • Spinach - 50 grams, blanched and chopped
  • Egg - 1 large, lightly beaten
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Nori (seaweed) sheets - 1 sheet, cut into strips
  • Cooked shrimp or tofu - 100 grams, sliced
  • Green onion - 1, finely chopped

Steps

  1. In a bowl, mix the cooked rice with rice vinegar, sugar, and salt. Set aside to cool slightly.
  2. In a skillet, heat a small amount of oil over medium heat and scramble the beaten egg until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, lightly sauté the julienned carrot and cucumber for about 2-3 minutes until slightly softened. Remove from heat.
  4. In a large serving bowl or plate, spread the seasoned rice evenly as the base.
  5. Arrange the sautéed vegetables, blanched spinach, julienned radish, and scrambled egg on top of the rice in a colorful pattern.
  6. Add sliced shrimp or tofu on top, and sprinkle with chopped green onion and toasted sesame seeds.
  7. Finally, drizzle sesame oil over the finished dish and garnish with nori strips. Serve immediately.
