Ingredients

  • Cooked white rice - 2 cups
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Radish - 100 grams, sliced thinly
  • Spinach - 100 grams, blanched
  • Eggs - 2 large
  • Sesame oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the rice according to package instructions and set aside to cool slightly.
  2. Blanch the spinach in boiling water for 1-2 minutes, then drain and squeeze out excess water. Season with a pinch of salt and a teaspoon of sesame oil.
  3. In a small bowl, mix the soy sauce, rice vinegar, honey, and remaining sesame oil to create the dressing.
  4. In a frying pan, fry the eggs sunny-side up or to your liking, seasoning with salt and pepper.
  5. In two bowls, divide the cooked rice evenly and arrange the julienned carrots, cucumbers, radish, and blanched spinach on top.
  6. Place one fried egg on top of each bowl, drizzle with the sesame-soy dressing, and sprinkle with sesame seeds.
