Ingredients

  • Cooked short-grain rice - 1 cup (200g)
  • Fresh cucumber - 1 small, julienned
  • Carrot - 1 medium, julienned
  • Radish - 1 small, julienned
  • Green onion - 2 stalks, chopped
  • Egg - 1 large, beaten
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Toasted sesame seeds - 1 teaspoon (5g)
  • Cooked and sliced chicken breast - 100g
  • Avocado - 1/2, sliced
  • Spinach - 1 cup, blanched
  • Seaweed salad - 1/2 cup (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the short-grain rice according to package instructions and allow it to cool slightly.
  2. In a skillet, heat a small amount of oil over medium heat and scramble the beaten egg until fully cooked. Remove from heat and set aside.
  3. In a bowl, combine the cooked chicken breast with soy sauce, sesame oil, salt, and pepper. Let it marinate for about 10 minutes.
  4. Julienne the cucumber, carrot, and radish, and chop the green onion.
  5. In a serving bowl, place the cooked rice as the base.
  6. Artfully arrange the marinated chicken, scrambled egg, cucumber, carrot, radish, spinach, avocado, and green onion on top of the rice.
  7. Sprinkle toasted sesame seeds over the top and add seaweed salad if desired.
  8. Serve immediately and enjoy your healthy Chirashi Bap.
