  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onion and sauté for 2-3 minutes until it becomes translucent.
  3. Stir in the minced garlic and sauté for another 30 seconds until fragrant.
  4. Add the sliced red and green bell peppers, zucchini, and julienned carrot to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the gochujang, soy sauce, and sesame oil. Pour this sauce over the stir-fried vegetables.
  6. Toss everything together to ensure the vegetables are well coated with the sauce. Cook for an additional 2-3 minutes.
