Ingredients

  • Fresh green chili peppers - 100g
  • Fresh red chili peppers - 100g
  • Cucumber - 1 medium (150g)
  • Carrot - 1 medium (100g)
  • Sesame oil - 1 tablespoon (15ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Sugar - 1 teaspoon (5g)
  • Sesame seeds - 1 tablespoon (10g)
  • Chopped green onions - 2 tablespoons (10g)
  • Salt - to taste

Steps

  1. Wash and dry the green and red chili peppers, then slice them thinly, removing the seeds if desired for less heat.
  2. Peel and julienne the cucumber and carrot into thin strips.
  3. In a mixing bowl, combine the sliced chili peppers, cucumber, and carrot.
  4. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, and a pinch of salt until the sugar is dissolved.
  5. Pour the dressing over the vegetable mixture and toss to coat evenly.
  6. Sprinkle the sesame seeds and chopped green onions on top, and give it another gentle toss.
  7. Serve immediately, or let it sit for 5 minutes to allow the flavors to meld.
