Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Vegetable oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Korean chili pepper paste (gochujang) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
  2. In a pot, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  3. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and diced onion, and sauté until the onion becomes translucent, about 3 minutes.
  4. Add the diced carrot, zucchini, and bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  5. Stir in the gochujang and soy sauce, mixing well to coat the vegetables evenly. Cook for an additional 2 minutes.
  6. Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Mix well to combine all ingredients.
  7. Drizzle with sesame oil and adjust salt to taste. Stir in the sliced green onions and sprinkle sesame seeds on top before serving.
