Ingredients
- Jasmine rice - 150 grams
- Water - 300 ml
- Vegetable oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Bell pepper - 1 small, diced
- Korean chili pepper paste (gochujang) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
- In a pot, combine the rinsed rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and diced onion, and sauté until the onion becomes translucent, about 3 minutes.
- Add the diced carrot, zucchini, and bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Stir in the gochujang and soy sauce, mixing well to coat the vegetables evenly. Cook for an additional 2 minutes.
- Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Mix well to combine all ingredients.
- Drizzle with sesame oil and adjust salt to taste. Stir in the sliced green onions and sprinkle sesame seeds on top before serving.
