Ingredients

  • Napa cabbage - 300 grams
  • Sea salt - 1 tablespoon
  • Carrot - 50 grams, julienned
  • Radish - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Korean red pepper flakes (gochugaru) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Water - 250 ml

Steps

  1. Cut the Napa cabbage into quarters and remove the core. Chop into bite-sized pieces.
  2. In a large bowl, dissolve the sea salt in 250 ml of water. Add the chopped cabbage and ensure it is submerged. Let it soak for about 20 minutes, turning occasionally.
  3. While the cabbage is soaking, prepare the kimchi paste. In a small bowl, combine the minced garlic, grated ginger, Korean red pepper flakes, soy sauce, and maple syrup. Mix well to create a paste.
  4. After 20 minutes, drain the cabbage and rinse it under cold water to remove excess salt. Squeeze out any excess water.
  5. In a large mixing bowl, combine the drained cabbage, julienned carrot, julienned radish, chopped green onion, and the kimchi paste. Use your hands (wearing gloves if desired) to mix everything thoroughly, ensuring the vegetables are well-coated with the paste.
  6. Transfer the mixture into a clean, airtight jar or container, pressing it down to pack it tightly. Leave some space at the top for fermentation.
  7. Seal the jar and let it ferment at room temperature for 1 to 2 days, depending on your taste preference. After fermenting, store it in the refrigerator.
