  • Rice noodles - 200 grams

  • Red chili flakes - 2 teaspoons
  • Soy sauce - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Coriander leaves - a handful, for garnish
  • Lime - 1, cut into wedges

Steps

  1. Cook the rice noodles according to the package instructions, then drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat and add the minced garlic, sautéing until fragrant, about 1 minute.
  3. Add the red chili flakes to the pan and cook for an additional 30 seconds, stirring continuously to prevent burning.
  4. Stir in the soy sauce and sesame oil, mixing well.
  5. Add the julienned carrot and sliced bell pepper to the pan, sautéing for 3-4 minutes until they are tender but still crunchy.
  6. Add the cooked rice noodles to the pan, tossing everything together until well coated in the sauce.
  7. Sprinkle chopped green onions and mix well.
  8. Remove from heat and serve hot, garnished with fresh coriander leaves and lime wedges on the side.
