Steps
- Cook the rice noodles according to the package instructions, then drain and set aside.
- In a large pan, heat the vegetable oil over medium heat and add the minced garlic, sautéing until fragrant, about 1 minute.
- Add the red chili flakes to the pan and cook for an additional 30 seconds, stirring continuously to prevent burning.
- Stir in the soy sauce and sesame oil, mixing well.
- Add the julienned carrot and sliced bell pepper to the pan, sautéing for 3-4 minutes until they are tender but still crunchy.
- Add the cooked rice noodles to the pan, tossing everything together until well coated in the sauce.
- Sprinkle chopped green onions and mix well.
- Remove from heat and serve hot, garnished with fresh coriander leaves and lime wedges on the side.
