- cooked chickpeas - 240 grams
- cooked rice - 100 grams
- carrot - 1 medium, grated
- spinach - 50 grams, blanched and chopped
- green onion - 2 stalks, finely chopped
- garlic - 2 cloves, minced
- soy sauce - 1 tablespoon
- sesame oil - 1 tablespoon
- gochujang - 1 tablespoon
- cornstarch - 2 tablespoons
- bread crumbs - 50 grams
- burger buns - 2
- cucumber - 1 small, sliced
- radish - 50 grams, thinly sliced
- sliced avocado - 1/2
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked rice, grated carrot, blanched spinach, chopped green onion, minced garlic, soy sauce, sesame oil, and gochujang to the mashed chickpeas. Mix well until all ingredients are combined.
- Stir in the cornstarch and bread crumbs until the mixture holds together. If too wet, add more bread crumbs as needed.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.
- While the patties are cooking, toast the burger buns lightly on a separate skillet or in a toaster.
- Assemble the burgers by placing a patty on each bun, topping with cucumber slices, radish, and avocado. Add extra gochujang sauce if desired.
