Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Kimchi - 100 grams, chopped
  • Green onions - 2, finely sliced
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Additional mozzarella cheese - 50 grams, for topping

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Rice the cauliflower by grating it or pulsing it in a food processor until it resembles rice grains.
  3. In a microwave-safe bowl, steam the riced cauliflower for about 8 minutes until tender. Let it cool.
  4. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a large bowl, combine the drained cauliflower, 150 grams of mozzarella cheese, cream cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  8. Remove the crust from the oven and spread the chopped kimchi evenly over the top. Sprinkle with the additional mozzarella cheese and sliced green onions.
  9. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbling and slightly golden.
  10. Let the pizza cool for a few minutes before slicing and serving.
