Ingredients

• Cauliflower rice - 300 grams
• Almond flour - 100 grams
• Egg - 1 large
• Mozzarella cheese - 100 grams, shredded
• Parmesan cheese - 30 grams, grated
• Garlic powder - 1 teaspoon
• Salt - 1/2 teaspoon
• Pepper - 1/4 teaspoon
• Olive oil - 1 tablespoon
• Toppings (bell peppers, onions, mushrooms) - 150 grams, diced
• Fresh basil - a handful, chopped

Steps

1. Preheat the oven to 200°C (400°F).
2. In a mixing bowl, combine the cauliflower rice, almond flour, egg, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
3. Press the mixture into a pizza shape on a baking sheet lined with parchment paper, about 1 cm thick.
4. Drizzle the olive oil over the crust and bake in the preheated oven for 15-20 minutes until golden brown.
5. While the crust is baking, prepare your toppings by sautéing the diced bell peppers, onions, and mushrooms in a pan until they are softened.
6. Once the crust is ready, remove it from the oven and add the sautéed vegetables on top, followed by additional mozzarella cheese if desired.
7. Return the pizza to the oven and bake for another 10 minutes until the cheese is bubbly and golden.
8. Remove from the oven, garnish with fresh basil, slice, and serve warm.
